Agua de Sandia

I love agua frescas.  Growing up in south Texas they were all over.  I remember going after school to get this unbelievable delicious pink drink.  I think this may have been at the age where I was convinced I didn’t like anything that wasn’t chicken noodle soup or macaroni and cheese, but I didn’t realize the candy like juice was actually fruit, and slurped it up.
This is a great drink on a hot day, and the perfect drink for a Bar-B-Que or hanging out poolside.  The best part is it could not be easier to whip up.

Agua de Sandia
serves 4

1 watermelon quarter, I would use seedless just to make it easier
2-3 cups water
1-2 tablespoons sugar
juice of 2 limes

The first thing I do is cut up the watermelon.  You are going to blend it, so the chunks don’t need to be any particular size.  Transfer these to a blender and start blending. You may need to add a little bit of water to get the process started.

Once the watermelon has started to break down I taste it.  I find some watermelons are sweeter than others, and some tend to release more water.  I slowly start adding water until it begins to look more like a liquid.  At this point I also add the lime and sugar.  Add the sugar a little bit at a time, I find a little goes a long way.

Next i place a strainer over a pitcher or bowl and press the watermelon through.  If you are using a bowl you are going to want to transfer it to a pitcher, cover, and chill 30 minutes to let it get nice and cold and taste it one more time to make sure its perfect. You can serve it up or on ice. Enjoy!

Watermelon Salad

I love watermelon, I mean LOVE IT!  I could probably eat a whole one daily if no one was looking.  It is one of those good for you things that taste like candy to me and is so refreshing at the same time.  One of my go to snacks during the summer is watermelon salad, and now that the summer is coming to an end I wanted to get this last minute post in so you could all try it!

Usually I will just take some chopped watermelon, mix it with some crumbled feta, basil, a sprinkle of salt, then top it with a squeeze of lime.  If I don’t have basil, mint is an equally delicious substitute.  Give this a this a try you will not be disappointed.

In fact I never even dreamed this salad could possibly be any better until I saw Jessica’s post on How Sweet it Is.  Quinoa.  I should of thought of this sooner.  This salad just became out of this world!  Mix your watermelon with 1 cup of Quinoa and and a tablespoon of honey. Enjoy!
